I've ridden disc brakes for the past year and my main complaint is the noise and the tight tolerances. Any little bit of dirt, sand, or mud on the rotor grinds all the way around, all through the race.

I hope the increasing popularity of mechanical disc brakes encourages manufacturers to design a better cable actuated disc brake (dual pad movement, more room between pad and rotor, easier pad changing).
Given the skinny width of 'cross tires, I don't think we need to go full on hydraulic. Better designs for cable-actuated disc brakes would go a long way toward making things better.
